Low Carb Muffins
Low carb muffins can really be one of the items on your low carb diet that helps you maintain your sanity. Eggs and bacon, bacon and eggs, and on and on it goes. But there are many options available you can add to your menu that will not blow your diet. Read on and you will find great tasting substitutions that are also low carb.
Here is a great Low Carb Muffin Recipe.
Ingredients:
- 2 cups almond flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 4 oz. (1 stick) butter, melted
- 4 eggs
- 1/3 cup water
- 3/4 cup Splenda (or sugar substitute)
Preparation:
1) Preheat oven to 350 F.
2) Grease a muffin tin.
3) Mix all dry ingredients together.
4) Beat the eggs and combine with other wet ingredients.
5) Combine wet and dry ingredients and mix throughly.
6) Fill muffin tin about 1/2 to 2/3 full.
7) Bake 15 to 18 minutes. (Insert toothpick to check.)

Nutritional Information: Each of 12 muffins has 1.5 grams effective carbs plus 2 grams fiber, 6 grams protein, and 185 calories.

There are several different variations you can try with this recipe and they all make great low carb muffins. Try adding a cup of blueberries into your batter as a last ingredient. Another idea is, after you fill the muffin tin, use a spoon and make a little indention in the top of the batter on each muffin and fill the indention with sugar free jam. Add 2 teaspoons of cinnamon, also 1/2 cup of unsweetened applesauce and 1 teaspoon of vanilla extract to the above recipe. The options are only limited to your imagination. The most important thing to do is get in the kitchen and start cooking.

Low carb diets are difficult to stay on if you fall into a habit of eating the same dishes without variation day after day. Mixing your diet up with lots of different dishes will help to keep you on track and keep the pounds coming off.
